Could someone help me understand the information presented in the Node Status screen in Reseller Central? I am unclear as to what the information is telling me and how it is useful/valuable to me. Please advise.

The Node stats are just there to tell you if anything is down on one of you domains. Such as HTTP, FTP, SQL and so on. If everything is green then its all good! ^_^
